Orange Dinners

Skinny Orange CHICKEN

SERVES: 4

SPECIAL: GFLO, GF, LC

Ingredients:

• 16 oz Chicken Breast

• 1 T Peanut Oil

• 2 cloves of Garlic

• 4 cups Broccoli

• 1 Red Onion

• 2 Large Carrots

• 1/3 cup Orange Marmalade

• ¼ cup Low Sodium Soy Sauce

• 1 T Sesame Seeds

• 1 Green Onion

DIRECTIONS:

1. Prepare chicken by washing and chopping into ½” bite-sized pieces. Prepare carrots and onions by washing, peeling and chopping into ½ - ¼” pieces. Prepare green onion by dicing into tiny pieces. Wash and chop broccoli into 1” bunches and mince the garlic.

2. Lightly steam the broccoli. This will be your base instead of traditional rice. Once tender, remove from steam, place on chopping board and chop into tinier pieces to resemble rice.

3. Heat oil in skillet or wok until just about smoking. Add garlic and let cook for about 1 minute. Add chicken and stir-fry for about 2 minutes. Add carrots, onions and continue to cook until chicken is cooked through, onions are translucent and carrots are slightly tender.

4. In a small dish, whisk together marmalade and soy sauce. Poor over cooked chicken and veggies.

5. Add ¼ of the chopped broccoli to a plate. Top with ¼ of chicken stirfry. Top with green onions and sesame seeds as garnish and serve!
